Maple Syrup (you can tell I’ve been spending a lot of time in Canada!)
I covered the bottom of the pan in Soya Sauce and then added about half an inch of ginger, grated. I turned the heat up to a low simmer, melted in a table spoon of butter, stirred and removed from heat. Then I added half a tablespoon of maple syrup. Play around with the amounts as personal taste may want the mixture sweeter or more gingery.
